Chia Strawberry Jam
GF, DF, RSF + V
Ingredients:
1 cup of diced strawberries
1 tbsp local raw honey
1 tbsp water
1/2 tbsp lemon juice
2 tbsp chia seeds
Method:
In a saucepan add the strawberries, honey, water and lemon juice and bring to a simmer.
Allow the strawberries to soften and start to break down (around 4 minutes).
Remove from the heat and mash with a fork to your desired consistency.
Stir through the chia seeds and let cool completely.
Store in an airtight container in the fridge for up to 5 days.
