Chia Strawberry Jam

GF, DF, RSF + V

Ingredients:

  • 1 cup of diced strawberries

  • 1 tbsp local raw honey

  • 1 tbsp water

  • 1/2 tbsp lemon juice

  • 2 tbsp chia seeds

Method:

  1. In a saucepan add the strawberries, honey, water and lemon juice and bring to a simmer.

  2. Allow the strawberries to soften and start to break down (around 4 minutes).

  3. Remove from the heat and mash with a fork to your desired consistency.

  4. Stir through the chia seeds and let cool completely.

  5. Store in an airtight container in the fridge for up to 5 days.
