Chicken Nourish Bowl

GF, DF and RSF Serves 2

Ingredients:

  • 1 large chicken breast diced

  • 1 tomato diced

  • 1 beetroot peeled and cubed

  • 1 sweet potato peeled and cubed

  • 3 cups of shredded kale

  • 1 carrot grated

  • Handful of sprouts

  • Salt and pepper

Green Goddess dressing::

  • 1/2 avocado

  • 1/4 cup of fresh coriander

  • 2 tbsp of lemon juice

  • 1 tbsp raw honey/maple syrup

  • 1/4 cup of water

  • Salt and pepper to taste

Method:

  1. Pre heat the oven to 180 degrees C and line a baking tray.

  2. Coat the beetroot in a drizzle of coconut/olive oil and a sprinkle of salt and place in the oven for 30 - 35 minutes.

  3. Now coat the sweet potato in some olive oil/coconut oil and a sprinkle of salt and place it in the oven once the beetroot has been in for 15 minutes and bake for around 20 mins or until cooked.

  4. While this bakes, make your salad dressing by adding all the dressing ingredients into a blender and blitz until creamy and smooth. Add a little extra water if needed and set aside.

  5. Now it’s time to cook your chicken. Sprinkle with a little salt and pepper and add to a hot pan with 1 tbs of coconut oil cooking until golden and cooked through.

  6. Add your kale with a few minutes to go to soften slightly.

  7. Now your sweet potato and beetroot should be done so you can start to plate up.

  8. Add all your ingredients into a bowl and drizzle with your delicious dressing.
