Tuna Cakes with Raw Slaw

GF, DF and RSF - Serve 3-4

Ingredients:

  • 1 tin of tuna 425g

  • 2 potatoes cubed

  • 1 tbsp of chives

  • 1 tbsp of parsley

  • 1/4 cup of dill

  • 1/2 cup of frozen peas

  • 1 spring onion diced

  • Zest of 1 lemon

  • 2 tbsp coconut flour

  • Salt and pepper

Slaw:

  • 2 cups of red cabbage shredded

  • 1 large beetroot grated

  • 2 large carrots grated

  • 1/4 cup of tahini

  • 2 tbsp of lemon juice

Method:

  1. In a pot of boiling water, add the potatoes and cook.

  2. While this boils, add your tuna, and all other ingredients except your raw slaw ingredients into a mixing bowl.

  3. Once potato is cooked add to the mixing bowl and mash together before scooping out mixture to create patties.

  4. Add the tuna cakes to a warm frypan and cook for around 5 minutes each side.

  5. While these cook assemble your raw slaw and mix together.

  6. Add all ingredients to your plate and enjoy.
