Immune boosting pumpkin soup

GF, DF and RSF - Serves 4

Ingredients:

  • 1 butternut pumpkin cubed

  • 700ml of vegetable stock

  • 2 garlic cloves finely diced

  • ½ onion diced

  • ½ tsp of ground turmeric

  • 1 tsp of grated ginger

  • ½ tsp cumin

  • 1 can of coconut milk (240ml)

  • Salt and pepper

Method:

  1. In a slow cooker add all ingredients except for the coconut milk.

  2. Cook on low for 6-8 hours.

  3. Once cooked, add in the coconut milk and blitz until smooth.
