Immune boosting pumpkin soup
GF, DF and RSF - Serves 4
Ingredients:
1 butternut pumpkin cubed
700ml of vegetable stock
2 garlic cloves finely diced
½ onion diced
½ tsp of ground turmeric
1 tsp of grated ginger
½ tsp cumin
1 can of coconut milk (240ml)
Salt and pepper
Method:
In a slow cooker add all ingredients except for the coconut milk.
Cook on low for 6-8 hours.
Once cooked, add in the coconut milk and blitz until smooth.
