Turkey Meatballs with Zoodles

(GF, DF + RSF) Serves 4

Ingredients:

  • 500g of Turkey mince

  • 1 carrot grated

  • 1 tsp of grated ginger

  • 1 garlic clove grated

  • 1/2 tsp of fennel seeds

  • Zest of one lemon

  • Salt and pepper

  • 2 large zucchini spiralled

Sauce:

  • 1 jar of passata 680g

  • 1 can of diced tomatoes

  • 1 large garlic clove grated

  • 1/2 onion diced

  • 1 tsp of smoked paprika

  • 1 tbsp of italian herbs

  • Juice of half lemon

  • 3 tbsp of Nutrtional yeast (optional)

  • 1 red capsicum diced

  • 1 cup of sliced mushrooms

  • Salt and Pepper

Method:

  1. Combine the Turkey mince, ginger, garlic, fennel, lemon rind, carrot and salt and pepper to a medium bowl .

  2. Mix the mixture together and roll into meatballs. Cover and place in fridge to set.

  3. Meanwhile add your garlic, onion, italian herbs and paprika to a heated frypan along with 1 tbsp of olive oil, fry for 3 minutes.

  4. Now add in your capsicum and mushrooms , stir to coat in the onion mixture and cook for a further 3 mins.

  5. Now add in your passata, diced tomatoes, lemon juice and nutritional yeast, bring to a simmer and cook for 10 minutes.

  6. Add in your meatballs and cook for 5 minutes before turning and cooking for another 8 minutes or until cooked through.

  7. While these cook add your zoodles into 4 bowls before topping with your beautiful meatballs and sauce.
