Turkey Meatballs with Zoodles
(GF, DF + RSF) Serves 4
Ingredients:
500g of Turkey mince
1 carrot grated
1 tsp of grated ginger
1 garlic clove grated
1/2 tsp of fennel seeds
Zest of one lemon
Salt and pepper
2 large zucchini spiralled
Sauce:
1 jar of passata 680g
1 can of diced tomatoes
1 large garlic clove grated
1/2 onion diced
1 tsp of smoked paprika
1 tbsp of italian herbs
Juice of half lemon
3 tbsp of Nutrtional yeast (optional)
1 red capsicum diced
1 cup of sliced mushrooms
Salt and Pepper
Method:
Combine the Turkey mince, ginger, garlic, fennel, lemon rind, carrot and salt and pepper to a medium bowl .
Mix the mixture together and roll into meatballs. Cover and place in fridge to set.
Meanwhile add your garlic, onion, italian herbs and paprika to a heated frypan along with 1 tbsp of olive oil, fry for 3 minutes.
Now add in your capsicum and mushrooms , stir to coat in the onion mixture and cook for a further 3 mins.
Now add in your passata, diced tomatoes, lemon juice and nutritional yeast, bring to a simmer and cook for 10 minutes.
Add in your meatballs and cook for 5 minutes before turning and cooking for another 8 minutes or until cooked through.
While these cook add your zoodles into 4 bowls before topping with your beautiful meatballs and sauce.
