Mac no Cheese
GF, DF, RSF – Serves 4
Ingredients:
· GF/Buckwheat/Spelt pasta 220g
· 1 can of coconut milk 240ml
· 5 tbsp of nutritional yeast
· 1 cup of diced pumpkin
· ¼ tsp of garlic powder
· ¼ tsp onion powder
· 1.4 tsp of paprika
· 1 tsp of Dijon mustard
· Salt and pepper
· 1 small head of broccoli
Method:
1. In a medium sauce pan, add in your coconut milk, nutritional yeast, onion and garlic powder, paprika, Dijon mustard and a good sprinkle of salt and pepper and bring to a low simmer stirring occasionally.
2. Meanwhile add your pumpkin and broccoli to your steamer.
3. While this steam, add your pasta to the water under the steamer and cook to packet instructions.
4. Once the pumpkin is soft add to a blender along and blitz into a smooth paste, add this to your coconut milk mixture and whisk through to create your yummy sauce.
5. Now stir through your pasta and broccoli.
6. Season with salt and pepper and enjoy!
