Morning Scramble

GF, DF AND RSF - serves 1

Ingredients:

  • 2 eggs whisked

  • 1 tbsp almond milk

  • Salt and pepper

  • 1/2 tsp oregano

  • 1/4 cup tomato diced

  • 1/4 cup diced zucchini

  • 1/4 sliced mushrooms

  • Hanful of kale/spinach

  • 1 slice of paleo loaf (optional)

  • 1/4 avocado (optional)

Method:

  1. In a bowl add the eggs, almond milk and a pinch of salt and pepper. Whisk well.

  2. In a heated frypan add 1 tbsp olive oil, oregano, tomato, zucchini and mushrooms. Stir and cook for 3 minutes.

  3. Add in the egg mixture and kale and scramble.

  4. If having the paleo loaf, spread over the avocado and load the eggs on top.
