Morning Scramble
GF, DF AND RSF - serves 1
Ingredients:
2 eggs whisked
1 tbsp almond milk
Salt and pepper
1/2 tsp oregano
1/4 cup tomato diced
1/4 cup diced zucchini
1/4 sliced mushrooms
Hanful of kale/spinach
1 slice of paleo loaf (optional)
1/4 avocado (optional)
Method:
In a bowl add the eggs, almond milk and a pinch of salt and pepper. Whisk well.
In a heated frypan add 1 tbsp olive oil, oregano, tomato, zucchini and mushrooms. Stir and cook for 3 minutes.
Add in the egg mixture and kale and scramble.
If having the paleo loaf, spread over the avocado and load the eggs on top.
