Salmon Cakes
GF, DF and RSF - Serves 2-3
Ingredients:
150g Salmon (tinned)
1 large sweet potato
1/2 cup peas
1 spring onion chopped
1/4 cup chopped dill
1/8 cup chopped chives
1/4 cup almond meal
Zest of 1 lemon
1/4 tsp salt
Sprinkle of black pepper
1 egg whisked
Bunch of mixed greens
200g cherry tomatoes halved
1 lebanese cucumber diced
Method:
In a bowl, add all the ingredients and mash with a fork ensuring all ingredietns are combined.
In a heated frypan, add 1 tbsp of coconut oil.
Form mixture into patties and place in the pan cooking 5 minutes each side or until golden.
While this cooks add your greens, tomatoes and cucumber to your plates.
Once salmon is cooked add on top with a squeeze of lemon juice.
