Salmon Cakes

GF, DF and RSF - Serves 2-3

Ingredients:

  • 150g Salmon (tinned)

  • 1 large sweet potato

  • 1/2 cup peas

  • 1 spring onion chopped

  • 1/4 cup chopped dill

  • 1/8 cup chopped chives

  • 1/4 cup almond meal

  • Zest of 1 lemon

  • 1/4 tsp salt

  • Sprinkle of black pepper

  • 1 egg whisked

  • Bunch of mixed greens

  • 200g cherry tomatoes halved

  • 1 lebanese cucumber diced

Method:

  1. In a bowl, add all the ingredients and mash with a fork ensuring all ingredietns are combined.

  2. In a heated frypan, add 1 tbsp of coconut oil.

  3. Form mixture into patties and place in the pan cooking 5 minutes each side or until golden.

  4. While this cooks add your greens, tomatoes and cucumber to your plates.

  5. Once salmon is cooked add on top with a squeeze of lemon juice.
