Raisin Loaf
GF, DF, V AND RSF - makes 1 loaf
Ingredients:
2 cups almond meal
2 tbsp coconut flour
1 1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup raisins
1/4 cup coconut sugar
2 eggs
3/4 cup almond/coconut milk
1/2 tsp vanilla extract
1 tbsp coconut oil
Method:
Preheat oven to 180 degrees C and line a loaf tin.
In a bowl, add all your dry ingredents together .
In a seperate bowl, add all your wet ingredients and whisk well.
Add your wet ingredients to your dry and whisk to combine.
Pour the mixture into prepared loaf tine and bake for 45 minutes.
Once cooked, remove and let cool before slicing.
