Raw Lemon Slice

GF, DF, V AND RSF

Ingredients:

Base:

  • 1/2 cup almonds

  • 1/2 cup of pitted dates

  • 1/2 cup shredded coconut

  • Zest of 1 lemon

  • 1/2 tsp salt

  • 3 tbsp melted coconut oil

Top:

  • 1 cup cashew (soaked for 6 hours)

  • Juice of 1 lemon

  • 4 tbsp melted coconut oil

  • 1/2 tsp vanilla extract

  • Toasted coconut flakes to top

Method:

  1. In a food processer, add all the base ingredients and blitz into a crumb.

  2. Spoon and press mixture into silicon molds and place in the freezer.

  3. Now, add all your slice ingredients into the processer and blitz until smooth and creamy.

  4. Take molds out of the freezer and top with the slice mixture and coconut.

  5. Put back in the freezer to set for 3 hours.
