Pumpkin Spice Muffins

GF, DF and RSF

Ingredients:

  • 1 ½ cups almond meal

  • ½ cup steamed pumpkin

  • 1 tsp baking powder

  • ¼ tsp baking soda

  • ½ tsp mixed spice

  • 2 tbsp coconut sugar

  • 1 egg whisked

  • ¼ tsp vanilla extract

  • ¼ cup arrowroot flour

  • ¼ cup chopped walnuts

  • Pinch of salt

    Method:

    1. Preheat oven 180 degrees C, prepare muffin molds

    2. In a bowl add all dry ingredients and mix

    3. In a separate bowl combine all wet ingredients and add to dry. Mix well

    4. Spoon mixture into prepared moulds and bake for 15 minutes or until cooked through

    5.. Let cool
