Chewy Choc Mint Slice

GF, DF AND RSF

Ingredients:

  • 1/2 cup of coconut oil

  • 1/3 cup of raw cacao powder

  • 1/4 cup of maple syrup

  • 1/2 tsp of vanilla extract

  • 1 cup of shredded coconut

  • 1 1/2 cup of puffed rice/quinoa

  • 2 tbsp of coconut flour

  • 3 drops of food grade peppermint essential oil

Method:

  1. In a saucepan add the coconut oil, maple syrup, cacao powder and vanilla. Bring to a low simmer and whisk to combine.

  2. Meanwhile add the rest of the ingredients into a mixing bowl stirring together.

  3. Once your chocolate mixture is melted, pour over the dry ingredients. Use a spoon to ensure all ingredients are mixed and coated.

  4. Line a slice tin with baking paper and pour in the mixture pressing down firmly.

  5. Place in the freezer for 2 hours to set.

  6. Remove, slice and pop in the fridge in an airtight container.
