Chewy Choc Mint Slice
GF, DF AND RSF
Ingredients:
1/2 cup of coconut oil
1/3 cup of raw cacao powder
1/4 cup of maple syrup
1/2 tsp of vanilla extract
1 cup of shredded coconut
1 1/2 cup of puffed rice/quinoa
2 tbsp of coconut flour
3 drops of food grade peppermint essential oil
Method:
In a saucepan add the coconut oil, maple syrup, cacao powder and vanilla. Bring to a low simmer and whisk to combine.
Meanwhile add the rest of the ingredients into a mixing bowl stirring together.
Once your chocolate mixture is melted, pour over the dry ingredients. Use a spoon to ensure all ingredients are mixed and coated.
Line a slice tin with baking paper and pour in the mixture pressing down firmly.
Place in the freezer for 2 hours to set.
Remove, slice and pop in the fridge in an airtight container.
