Blackbean Tacos
GF, DF and RSF - serves 4
Ingredients:
8 GF tortillas
1 can of organic blackbeans rinsed
1 red capsicum diced
1 tsp smoked paprika
1 tsp cumin
Salt and pepper
Salsa:
2 tomatoes diced
1 avocado diced
1/2 cup of corn kernals
1/2 cup diced cucumber
Juice of 1 lime
1/2 cup of my pickled onion (optional)
Fresh coriander and sriracha mayo to serve
2 cups of shredded iceberg lettuce
Method:
In a heated frypan add 1 tbsp of olive oil, blackbeans, paprika, cumin and a pinch of salt and pepper cooking for 5 minutes.
Meanwhile prep your salsa ingredients and add them to a bowl mixing well.
Warm up your tortillas slightly.
Now your beans should be ready and you can start assembling.
Add your beans, lettuce, salsa and top with the mayo, pickled onion and coriander.
