Blackbean Tacos

GF, DF and RSF - serves 4

Ingredients:

  • 8 GF tortillas

  • 1 can of organic blackbeans rinsed

  • 1 red capsicum diced

  • 1 tsp smoked paprika

  • 1 tsp cumin

  • Salt and pepper

    Salsa:

  • 2 tomatoes diced

  • 1 avocado diced

  • 1/2 cup of corn kernals

  • 1/2 cup diced cucumber

  • Juice of 1 lime

  • 1/2 cup of my pickled onion (optional)

  • Fresh coriander and sriracha mayo to serve

  • 2 cups of shredded iceberg lettuce

Method:

  • In a heated frypan add 1 tbsp of olive oil, blackbeans, paprika, cumin and a pinch of salt and pepper cooking for 5 minutes.

  • Meanwhile prep your salsa ingredients and add them to a bowl mixing well.

  • Warm up your tortillas slightly.

  • Now your beans should be ready and you can start assembling.

  • Add your beans, lettuce, salsa and top with the mayo, pickled onion and coriander.
