Breakfast Pizza

GF, DF AND RSF

Ingredients:

Base:

  • 4 eggs whisked

  • ½ cup canned coconut milk

  • ¼ cup melted coconut oil

  • 1 tsp oregano

  • 1 cup arrowroot flour

  • Salt and pepper

Toppings:

  • ¼ cup diced capsicum

  • 1 cup chopped spinach

  • ½ red onion finely chopped

  • ½ cup cherry tomatoes

  • ½ avocado, fresh basil, extra virgin olive oil and balsamic vinegar (to top)

    Method:

    1. Preheat oven to 160 and line a baking tray.

    2. For the base add all dry ingreients into a bowl and whisk.

  • 3. In a separate bowl combine all wet ingredients before adding to dry. Mix well.

    4. Like a pancake, on a lined baking tray pour 4 bases. Bake for 10 minutes or until cooked.

    5. Once cooked, remove and add a drizzle of extra virgin olive oil, and balsamic followed by the toppings. Bake for a further 10 minutes.

    5. Remove and top with fresh basil and avocado.
