Baked Pear Porridge

  • 1 pear halved

  • ½ cup rolled oats

  • ½ cup + ¼ cup extra coconut/ almond milk

  • 1 cup water

  • ½ tsp cinnamon

  • ½ tsp vanilla extract

  • Toppings: shredded coconut and hemp seeds

    Method

    1. Preheat oven to 160 degrees C and line a baking tray

    2. Bake your halved pear for 30 minutes or until soft and golden

    3. With 10 minutes left, add the oats, water, ½ cup milk, cinnamon and vanilla to a saucepan (simmer for 5 minutes or until oats are cooked) stirring occasionally

    4. Finish pear on griddle pan (optional)

    5. Serve oats and top with ¼ or ½ pear (save the rest for tomorrows brekkie)

6. Add toppings and extra milk and enjoy!
