Orange and Poppy Seed Muffins

GF, DF and RSF

Ingredients:

  • 2 ½ cups almond meal

  • ½ cup arrowroot flour

  • ¼ tsp cinnamon

  • ½ cup coconut sugar

  • 1 tsp baking powder

  • ¼ cup poppy seeds

  • 1 cup almond/coconut milk

  • Juice of 1 orange

  • 1 tsp vanilla extract

    Method:

    1. Preheat over to 180 degrees C and prepare muffin tins.

    2. Combine all dry ingredients in a medium bowl .

    3. In a separate bowl mix all wet ingredients together.

    4. Add wet ingredients to dry and whisk to combine.

    5. Pour mixture into molds and bake for 15-20 minutes (or until skewer comes out clean) .

    6. Let cool in the molds.

    7. Top with coconut yoghurt and orange zest.
