Dill and Almond Crusted Salmon
GF, DF and RSF - serves 2
Ingredients:
2 salmon fillets (skin off)
1/2 cup almonds
2 tbsp sesame seeds
1/3 cup dill
Zest of 1 lemon
1 tbsp coconut oil
Salt and pepper
2 zucchini zoodled
1 bunch broccolini
1 cup cherry tomatoes
1 cup of peas
2 tbsp lemon juice
Method:
Pre heat oven to 160 degrees C and line a baking tray.
In a heated pan, sear the salmon fillets and place on the baking tray and turn off the pan.
In a food processor, add the almonds, sesame seeds, dill, lemon zest , pinch of salt and pepper and the coconut oil and blitz to a crumb.
Press crumb on to the top side of the salmon.
Place in the oven and bake for 20 mins or until cooked.
Meanwhile, heat your pan back up with 10 minutes to go.
Add the broccolini and 1 tbsp olive oil and cook for 5 minutes.
Now add in the cherry tomatoes, peas and lemon juice, cooking for another 3 minutes.
Just before serving toss through your zoodles.
Remove salmon from the oven and serve.
