Banana Chia Pudding

GF, DF AND RSF

Ingredients:

  • 1 small banana

  • ¼ cup chia seeds

  • 1 cup coconut milk

  • 1 tsp cinnamon

  • 1 tbsp vanilla protein powder or ¼ tsp vanilla extract

  • 2 tbsp shredded coconut

  • Sunflower seeds

    Method:

    1. Put all ingredients except sunflower seeds + chia seeds and blitz together

    2. Stir through chia seeds and pour into a bowl

    3. Top with sunflower seeds and place in the fridge overnight to set
