Pizza Pasta Bake
INGREDIENTS:
4 rashers of short cut bacon, diced
1/4 red onion finely diced
2 garlic cloves finely diced
1 green capsicum, diced
1 1/2 cups sliced mushroom
1/4 cup kalamata olives, pitted and halved
1 can diced tomatoes
2 cups passata
1 tbsp italian herbs
250g GF pasta
Grated cheese* to serve (use DF if needed)
Chopped parsley to serve
METHOD:
Preheat the oven to 180 degrees C and grease a baking dish.
Cook pasta according to instructions.
While this cooks, fry off the bacon in a heated frypan.
Once cooked, add in the onion, garlic, capsicum and italian herbs. Stir and cook for 1-2 minutes.
Add in the mushroom and olives and cook for another minute.
Now add in the diced tomatoes and passata. Season with salt and pepper and bring to a simmer.
Once pasta is cooked, add to the pan. Mix well and pour into the prepared dish.
Spread over grated cheese and bake in the oven for 15-20 minutes.
Add parsley and serve.
