Pizza Pasta Bake

INGREDIENTS:

  • 4 rashers of short cut bacon, diced

  • 1/4 red onion finely diced

  • 2 garlic cloves finely diced

  • 1 green capsicum, diced

  • 1 1/2 cups sliced mushroom

  • 1/4 cup kalamata olives, pitted and halved

  • 1 can diced tomatoes

  • 2 cups passata

  • 1 tbsp italian herbs

  • 250g GF pasta

  • Grated cheese* to serve (use DF if needed)

  • Chopped parsley to serve

METHOD:

  1. Preheat the oven to 180 degrees C and grease a baking dish.

  2. Cook pasta according to instructions.

  3. While this cooks, fry off the bacon in a heated frypan.

  4. Once cooked, add in the onion, garlic, capsicum and italian herbs. Stir and cook for 1-2 minutes.

  5. Add in the mushroom and olives and cook for another minute.

  6. Now add in the diced tomatoes and passata. Season with salt and pepper and bring to a simmer.

  7. Once pasta is cooked, add to the pan. Mix well and pour into the prepared dish.

  8. Spread over grated cheese and bake in the oven for 15-20 minutes.

  9. Add parsley and serve.
