Dill Potato Salad
INGREDIENTS:
2 large white potatoes
1/3 cup peas
1/4 cup mayonnaise
1/4 tsp dijon mustard
1/2 tbsp finely chopped dill
1 spring onion finely diced
Salt and pepper
METHOD:
Peel and dice potatoes into 3cm cubes. Add to a pot of boiling water and cook for around 8 minutes or until a fork goes through easily. Drain and let cool.
Once cool, add in the rest of the ingredients. Stir mixing well.
