Dill Potato Salad

INGREDIENTS:

  • 2 large white potatoes

  • 1/3 cup peas

  • 1/4 cup mayonnaise

  • 1/4 tsp dijon mustard

  • 1/2 tbsp finely chopped dill

  • 1 spring onion finely diced

  • Salt and pepper

METHOD:

  1. Peel and dice potatoes into 3cm cubes. Add to a pot of boiling water and cook for around 8 minutes or until a fork goes through easily. Drain and let cool.

  2. Once cool, add in the rest of the ingredients. Stir mixing well.
