Veggie Loaded Meatballs
INGREDIENTS:
MEATBALLS:
500g beef mince
1 garlic clove
2 tbsp finely chopped herbs like basil, thyme and oregano
Salt and pepper
SAUCE:
1 small onion, finely diced
2 garlic cloves, grated
1 small carrot grated
1/2 red capsicum, finely diced
1 tbsp italian herbs
1 tsp smoked paprika
1 can diced tomatoes
1 cup beef stock
1 tbsp tomato paste
Pasta to serve
METHOD:
Heat a frypan to a medium heat adding a splash of olive oil.
While this heats add the meatball ingredients into a bowl and mix together using your hands. Once mixed roll into balls and add to the frypan browning each side. Once meatballs are browned, set them aside.
Now add the onion and garlic into the frypan in the leftover juices. Fry off for 1 minute.
Add in the carrot and capsicumand fry off for 3 minutes.
Add in the italian herbs and saute for 1 minute. Now add in diced tomatoes, beef stock and tomato paste, mix together and simmer for 10 minutes mixing occasionally. Season as needed.
While this cooks, cook your pasta according to packet instructions.
Now add the meatballs in and simmer for 5 minutes. Serve over pasta and enjoy!
