Lamb and Feta Sausage Rolls
INGREDIENTS:
500g lamb mince
1/2 onion, diced
2 garlic cloves, finely diced
1 small carrot, grated
2 cups chopped spinach
5 mint leaves, finely chopped
1/2 tsp cumin
1 tsp rosemary
Zest of 1 lemon
1/4 cup goats feta or normal feta
Salt and pepper
2 sheets puff pastry
Preheat your oven to 180 degrees and line a 1 - 2 baking trays with baking paper.
In a medium to low heated frypan add in the onion and garlic, saute for 1 minute.
Add in the lamb mince, season with salt and pepper and cook until browned.
Now add in the carrot, cumin, rosemary and lemon zest. Stir and cook for a 5 minutes.
Finely, add in the spinach, feta and mint and gently fold through. Turn off and remove from heat.
Scoop the mixture onto the puff pastry in a line. Gentle fold over and roll sealing the edge.
To really golden the outside you can lightly brush over some whisked egg.
Place in the oven and cook for 20 minutes or until golden and crispy.
Cut each one in half.
