Garlic and Thyme Mushrooms

GF*, DF* + VE - serves 1

INGREDIENTS:

  • 1 slice sourdough or GF bread

  • 4 button mushrooms, peeled and halved

  • 5 cherry tomatoes, halved

  • 1 small garlic clove, grated

  • 1/2 tsp thyme

  • 1 handful spinach

  • 1 egg

  • Salt and pepper

  • Avocado and goats cheese to serve (use VE feta if needed)

METHOD:

  1. Add a splash of olive oil to a heated pan and add the garlic and thyme. Saute for 30 seconds or until fragrant.

  2. Add in the mushrooms, tomato and a good pinch of salt. Cook for around 3 minutes or until the mushrooms have browned and softened.

  3. Move the mushrooms to one side and crack in your egg. Cook to your liking.

  4. While this cook, toast your bread.

  5. Add the spinach in the pan just before serving to wilt.

  6. Once your toast is done, spread over some avocado. Top with the mushroom and tomato mixture, egg, 1/2 tbsp goats cheese and season with salt and pepper.
