Grilled Chicken Burgers with Avo Aioli
INGREDIENTS:
2 chicken breasts sliced in half
2 tbsp olive oil
1 tsp mixed herbs
1 tsp paprika
1/2 tsp salt
Crack of black pepper
1 tomato, sliced
1 lebanese cucumber sliced
Lettuce
Bread rolls (GF if needed)
AVO AIOLI:
1 large avocado
1 small garlic clove
1 tbsp lemon juice
1/8 tsp onion powder
1/8 tsp smoked paprika
METHOD:
In a small bowl make the marinade for the chicken. Add the olive oil, mixed herbs, paprika, salt and pepper and mix well. Dry the chicken then rub the marinade over the chicken breasts.
Heat a frypan to a medium heat and add the chicken breasts. Cook for around 4 minutes each side or until golden and cooked through.
While this cooks, add all the aioli ingredients into a blender and blitz until smooth. Add a splash of water if needed.
Once the chicken is cooked you can assemble your burgers.
