Garlic Ginger Beef
GF + DF - serves 4
INGREDIENTS:
500g beef strips
1/2 tsp sesame oil
1 garlic clove, grated
1 tbsp ginger, grated
1 bunch broccolini, ends trimmed
100g green beans, ends trimmed
1 cup sliced mushroom
2 spring onions, finely diced
2 handfuls of spinach
1 1/2 cups jasmin rice
SAUCE:
1 tbsp grated ginger
2 garlic cloves, grated
1/4 cup tamari
1 tbsp apple cider vinegar
2 tsp coconut sugar
2 tbsp tapioca flour
METHOD:
Cook the rice as per packet instructions.
While this cooks, add a splash of olive oil into a medium heated frypan and add the beef. Season with salt and pepper and brown the meat until golden and cooked through.
While this cooks add all the sauce ingredients into a small bowl and whisk together. Set aside.
Once the beef is cook set aside.
Turn down the heat slightly and add the sesame oil, ginger and garlic to the frypan. Saute for 30 seconds.
Add in the broccolini, beans, mushroom and spring onion. Cook for a few minutes. Add a splash of water if needed to prevent the veggies from burning.
Now add the beef back in and pour over the sauce. Mix well and cook for 2 minutes. Stir through the spinach at the end.
Divide the rice and scoop over the garlic and ginger beef. I like to sprinkle over some sesame seeds.
