Chicken Souvlaki
INGREDIENTS:
600g chicken thigh, diced
MARINADE:
4 tbsp olive oil
2 tsp oregano
1 tsp coriander
1 tsp cumin
1 tsp smoked paprika
Zest of 1 lemon
2 garlic cloves, grated
1/2 tsp salt
1/4 tsp pepper
Souvlaki Bread (4 servings), use GF wraps if needed
2 cups chopped lettuce
250g cherry tomatoes halved
1/2 continental cucumber, diced
1 tbsp red onion, diced
Tzatziki or make this DF Tzatziki

METHOD:
The morning of, add the chicken and marinade into a bowl and mix well. Cover with cling wrap and place in the fridge. This can be done just before cooking but the flavour won’t be as deep.
Get the chicken out of the fridge 20 minutes before cooking to come to room temperature.
Heat a griddle pan to a medium heat, add the chicken and cook until golden and cooked through.
While this cooks prep your salad and make your tzatziki if making your own.
When the chicken is done, turn off the heat.
Heat up the bread according to packet instructions.
Spread over the tzatziki, the salad ingredients and top with the chicken.
Roll and enjoy!
*Use the leftover tzatziki on sandwiches or in salads.
