Wholesome Rocky Road
INGREDIENTS:
300g DF dark or milk chocolate
1/4 cup pistachios
1/3 cup roasted cashews or macadamias, chopped
1/4 cup pumpkin seeds
1/3 cup dried cranberries
2 rice cakes broken into small pieces
METHOD:
Line a smaller slice tin or use silicon moulds (what I used).
In a saucepan on a low heat, melt the chocolate. Stir throughout.
While this is melting add all the other ingredients into a bowl.
When the chocolate is melted pour it into the bowl with the other ingredients.
Fold the mixture through using a spatula. Make sure it’s all coated with the beautiful chocolate.
Pour the mixture into the slice tin or silicon moulds and place in the fridge for an hour to set.
Once set cut into bite size pieces and store in a airtight container in the fridge.
