Cheeky Mango and Chicken Salad

INGREDIENTS:

  • 2 large chicken breasts, sliced

  • Olive oil

  • Salt and pepper

  • 1 mango, diced (pit + skin removed)

  • 250g cherry tomatoes, halved

  • 1/2 continental cucumber, diced

  • 1/4 red onion, thinly sliced

  • 1 large bunch of cos lettuce, chopped (around 6 cups)

  • 1 avocado, diced

  • Coriander to serve (optional)

    DRESSING:

  • 1/4 cup EVOO

  • 1 1/2 tbsp apple cider vinegar

  • 1 tbsp honey

  • 1 garlic clove, minced

  • Salt and pepper to taste

GF, DF - serves 3-4

METHOD:

  1. Place the chicken in a bowl with 1 tbsp of olive oil and season with salt and pepper.

  2. Add the chicken to a heated grill pan and cook the chicken for 3-4 minutes each side or until golden and cooked through.

  3. While this cooks add all the salad ingredients into a large salad bowl.

  4. Mix together all the dressing ingredients in a small bowl.

  5. Once the chicken is cooked, add it to the salad and drizzle of the dressing. Top with coriander.
