Cheeky Mango and Chicken Salad
INGREDIENTS:
2 large chicken breasts, sliced
Olive oil
Salt and pepper
1 mango, diced (pit + skin removed)
250g cherry tomatoes, halved
1/2 continental cucumber, diced
1/4 red onion, thinly sliced
1 large bunch of cos lettuce, chopped (around 6 cups)
1 avocado, diced
Coriander to serve (optional)
DRESSING:
1/4 cup EVOO
1 1/2 tbsp apple cider vinegar
1 tbsp honey
1 garlic clove, minced
Salt and pepper to taste

METHOD:
Place the chicken in a bowl with 1 tbsp of olive oil and season with salt and pepper.
Add the chicken to a heated grill pan and cook the chicken for 3-4 minutes each side or until golden and cooked through.
While this cooks add all the salad ingredients into a large salad bowl.
Mix together all the dressing ingredients in a small bowl.
Once the chicken is cooked, add it to the salad and drizzle of the dressing. Top with coriander.
