Chickpea Blondies

GF, DF, VE - makes 10 squares

INGREDIENTS:

  • 1 can chickpeas, drained, rinsed and dried

  • 1/3 cup peanut butter or any nut/seed butter

  • 1/2 cup maple syrup

  • 1/2 tsp vanilla extract

  • 1/2 cup almond or oat flour (for oat flour just blend oats until a fine powder)

  • 1/4 tsp baking soda

  • 1/4 tsp bicarb soda

  • Pinch of sea salt

  • 1/3 cup vegan choc chips

METHOD:

  1. Preheat your oven to 180 degrees C and line a brownie tin.

  2. In a food processor blend all the ingredients together except the choc chips until smooth.

  3. Stir through the choc chips.

  4. Pour mixture into the tin and bake for around 40 minutes or until golden.

  5. When done, remove and let cool for 15 minutes in the tin. This is essential as if it firms up as it cools so if you goto take it out and it breaks leave it for longer.

  6. When cooled place on a cooling rack to set further.

  7. Slice and place in an airtight container in the cupboard for upto 3 days or 5 in the fridge.
