Banana Waffles

You can make the batter the night before and keep in the fridge.

GF, DF, V - serves 1

INGREDIENTS:

  • 1 medium ripe banana

  • 1 egg

  • 1/4 tsp vanilla extract

  • 3/4 cup oat flour* (GF if needed), I just blend oats into a fine flour.

  • 1/2 tsp GF baking powder

  • Berries, maple syrup and hemp seeds to top

METHOD:

  1. Add everything except the berries, hemp seeds and maple syrup into a blender and blitz until smooth.

  2. Grease your waffle press and pour the mixture in.

  3. Cook until golden.

  4. Top with berries, maple syrup and hemp seeds.
