Lemon and Cashew Collagen Bars
GF, DF, V + RSF - Makes 6 bars or 12 slices
Ingredients:
1 cup pitted dates
1/2 cup raw cashews (sub for sunflower seeds to make nut free)
1/4 cup boiled water
1/2 tsp vanilla extract
1/2 cup desiccated coconut (add and extra 2 tbsp if not using collagen powder) + extra for coating
3 tbsp collagen powder (optional but amazing)
Zest and juice of 1 small lemon
Pinch of himalayan salt
Method:
Add the dates, cashews, vanilla extract and boiled water into a food processor and let soak for 5 minutes.
Blitz to for a chunky paste.
Add in all the other ingredients and blitz together. You may need to scrape down the sides and blitz a few times.
Once down, remove blade and scoop out the mixture and shape into bars.
Press in dessicated coconut and store in an airtight container in the fridge for up to a week.
