Smoked Salmon Omelette

GF, DF + RSF - serves 1

Ingredients:

  • 2 eggs

  • 1 tbsp plant based milk

  • Salt and pepper

  • 1 tsp chopped chives

  • 1/2 tbsp chopped dill

  • 2 asparagus chopped

  • 1 small spring onion chopped

  • Handful of spinach

  • 50g smoked salmon

Method:

  1. Remove the ends of the asparagus and chop the remaining.

  2. Finely dice the chives, dill and spring onion.

  3. Heat a frypan to a low-medium heat and add a splash of olive oil.

  4. Add in the asparagus, chives, dill, spring onion and spinach. Cook for around 4-5 minutes.

  5. While this cooks, whisk the eggs, milk, salt and pepper.

  6. Pour over the egg mixture ensuring the whole pan is covered.

  7. Lay the smoked salmon on one half of the omelette.

  8. Once the omelette is cooked through carefully fold one half over the other. Turn off the heat and slide the omelette onto a large plate.
