Jam Drops

GF, DF, V + RSF

Ingredients:

  • 2 cups almond meal

  • 1 tsp ground cinnamon

  • 2 tsp baking powder

  • 1/2 cup melted coconut oil

  • 2 eggs, whisked

  • 1/2 tsp vanilla extract

  • 3 tbsp coconut sugar

  • Chia strawberry jam

Method:

  1. Preheat your oven to 180 degrees C and line a baking tray with baking powder.

  2. In a mixing bowl combine all your dry ingredients and mix.

  3. In a separate bowl whisk together the coconut oil, eggs and vanilla extract.

  4. Pour your wet ingredients into the dry and mix well.

  5. Using a spoon scoop out a heaped spoonful and roll into a ball. Place on the baking try and press down with the back of the spoon. repeat with the rest of the mixture.

  6. Now using your finger, press a small dent into the middle of the biscuit and fill with a tsp of the jam.

  7. Place in the oven and bake for around 20-25 minutes or until golden.

Store in an airtight container.
