Jam Drops
GF, DF, V + RSF
Ingredients:
2 cups almond meal
1 tsp ground cinnamon
2 tsp baking powder
1/2 cup melted coconut oil
2 eggs, whisked
1/2 tsp vanilla extract
3 tbsp coconut sugar
Method:
Preheat your oven to 180 degrees C and line a baking tray with baking powder.
In a mixing bowl combine all your dry ingredients and mix.
In a separate bowl whisk together the coconut oil, eggs and vanilla extract.
Pour your wet ingredients into the dry and mix well.
Using a spoon scoop out a heaped spoonful and roll into a ball. Place on the baking try and press down with the back of the spoon. repeat with the rest of the mixture.
Now using your finger, press a small dent into the middle of the biscuit and fill with a tsp of the jam.
Place in the oven and bake for around 20-25 minutes or until golden.
Store in an airtight container.
