Black bean Quesadillas
GF*, DF, V + RSF - Serves 3
Ingredients:
Filling:
1 can rinsed black beans
1 cup corn
1 red capsicum diced
1 cup sliced mushrooms
1/2 tsp garlic granules
1 tbsp smoked paprika
1 tsp ground cumin
1 tsp ground coriander
Salt and pepper
1/3 cup passata
1/2 tsp apple cider vinegar
GF tortillas
Fresh coriander
Jalapeno optional
Salsa:
1 lebanese cucumber diced
1 tomato diced
1/4 red onion diced
1/2 tbsp lime juice
Smashed avocado:
1 avocado mashed
1/2 tbsp lime juice
Salt and pepper to taste
Method:
Add a splash of olive oil into a heated frypan.
Add your black beans, corn, capsicum and spices and cook for 3 minutes.
Now add in the passata and apple cider vinegar mixing well and cooking for a further 3 minutes.
While this cooks, prep your salsa and smashed avocado and set aside.
Once your filling is cooked, place one tortilla onto plate and spread over some filling.
Top with another tortilla and carefully slide in onto a sandwich press. Close and cook until the tortilla start to brown and crisp slightly. Remove and repeat.
Once done cut into quarters and spread over the smashed avocado, top with salsa, fresh coriander and sliced jalapenos.
