Tofu Teriyaki
GF, DF, V and RSF - Serves 4
Ingredients:
500g firm organic tofu or Chickpeas
1 1/2 cups brown rice
1 large carrot peeled and chopped into matchsticks
1 red capsicum sliced
2 bunches broccolini stems trimmed
2 big handfuls of spinach
2 spring onion diced
Sesame seeds to sprinkle on top
Teriyaki Sauce:
1/4 cup tamari
1/4 cup water
2 tbsp maple syrup
1 tbsp apple cider vinegar
1 garlic clove grated
1 tsp grated ginger
1 tbsp arrowroot powder/cornstarch
(Double if you like it extra saucy)
Method:
Add your rice to a pot with required amount of water and cook.
In a small bowl add all your sauce ingredients and whisk well.
Heat a frypan to medium heat and slice your tofu into 2 x 4cm pieces.
Add 1/4 of the sauce to tha pan and fry the tofu until golden (2-3 mins each side), set aside and cover.
Now add your broccolini with 2 tbsp of your sauce. Cook for a few minutes until tender.
While this cooks prep the rest of your ingredients.
Once your broccolini is done you can add the tofu back in the warm up.
Once your rice is cooked, divide amongst four bowls. Top with spinach, the veggies, tofu and spring onion.
Pour over the rest of the sauce and sprinkle over sesame seeds.
