Self Saucing Pudding

GF, DF, V and RSF - serves 4

Ingredients:

  • 1 cup almond flour

  • 1 tsp baking powder

  • 1/2 cup coconut sugar

  • 2 tbsp raw cacao powder

  • 1/2 cup coconut/almond milk

  • 1 egg

Sauce:

  • 3/4 cup coconut sugar

  • 2 tbsp raw cacao powder

  • 1 1/4 cup boiling water

Method:

  1. Preheat your oven to 180 degrees C and grease 2 ramekins.

  2. In a bowl add the dry pudding ingredients and mix.

  3. In a seperate bowl add the wet and whisk before adding to the dry. Mix well until smooth.

  4. Pour the mixture into the prepared ramekins and smooth out.

  5. To make the sauce add the coconut sugar and raw cacao powder in a small bowl and mix. Spread evenly on top of your pudding mixture.

  6. Now pour over the boiled water covering the puddings.

  7. Place in the oven and bake for around 40 minutes or until cooked (will be slightly springy)

  8. Remove and serve with coconut yoghurt and berries.
