Pork Skewers

GF, DF + RSF - serves 4

Ingredients:

  • 500g pork loin diced

  • 2 tbsp tomato paste

  • 1 tbsp coconut aminos

  • Salt and pepper

  • 1 large zucchini

  • 1 red capsicum sliced into thin chunks

  • 1/2 red onion sliced into thin chunks

  • 1 cup cherry tomatoes

  • Olive oil

  • Wooden skewers (pre soaked)

Method:

  1. In a small bowl add the pork, tomato paste, coconut aminos, salt and pepper and mix well. Set aside.

  2. While this marinades, prep your veggies.

  3. Assemble your skewers add on one each of the veggies followed by a piece of pork and repeat.

  4. Heat a griddle pan or large fry pan to a medium heat and add a good splash of olive oil.

  5. Add the skewers and cook each side for around 5 minutes or until cooked.

  6. Serve with my sweet potato bake or spinach.
