Quinoa Chilli
1 cup quinoa
2 cups veg stock
1 can organic blackbeans rinsed
1 cup sliced mushrooms
1 can diced tomatoes
1 tsp smoked paprika
1/2 tsp cumin
1/2 tsp ground coriander
Salt and pepper
1/2 red onion diced
1 garlic clove grated
1 cucmber diced
2 tomatoes diced
1 avocado diced
1 bunch of greens (I used cos lettuce)
1 lime
Cashew sour cream/greek yoghurt to serve
Fresh coriander to serve (optional)
