Quinoa Chilli

  • 1 cup quinoa

  • 2 cups veg stock

  • 1 can organic blackbeans rinsed

  • 1 cup sliced mushrooms

  • 1 can diced tomatoes

  • 1 tsp smoked paprika

  • 1/2 tsp cumin

  • 1/2 tsp ground coriander

  • Salt and pepper

  • 1/2 red onion diced

  • 1 garlic clove grated

  • 1 cucmber diced

  • 2 tomatoes diced

  • 1 avocado diced

  • 1 bunch of greens (I used cos lettuce)

  • 1 lime

  • Cashew sour cream/greek yoghurt to serve

  • Fresh coriander to serve (optional)
