Asian Turkey Stirfry
GF, DF and RSF - serves 4
Ingredients:
500g Turkey breast mince
1 tbsp grated ginger
2 garlic cloves finely diced
2 stalks spring onion diced
1/4 red cabbage chopped
1 bunch of kale chopped stalks removed
2 carrots grated
2 tbsp tamari
1/2 tsp sesame oil
Salt and pepper
1/2 lemon
1 tbsp raw honey (optional)
1.5 cups brown rice
3 cups vegetable stock
Method:
In a saucepanadd your rice and vegetable stock and bring to a simmer cooking to packet instructions.
In a heated frypan add 1 tbsp olive oil, sesame oil, garlic, ginger and spring onion and saute for 3 minutes.
Now add in your turkey mince breaking it up with your spoon.
Pour in the tamari and honey if using and stir. Cook for 5 minutes.
Now add in your cabbage, carrot and kale, cooking for 5 more minutes.
Add a pinch of black pepper and a sprinkle of salt.
By this time your rice should be almost done. Add the rice in with the turkey mixture and stir.
Add the juice of half lemon, stir and serve.
