Pan Fried Salmon with Zoodles

GF, DF and RSF - serves 4

Ingredients:

  • 2 spring onion diced

  • 2 garlic cloves finely diced

  • 1/2 tbsp grated ginger

  • Salt and pepper

  • 3 salmon fillets

  • 1 tbsp coconut aminos

  • 1 lemon

  • 250g cherry tomatoes

  • 1 bunch of kale/spinach

  • 1 medium head of broccoli, florest cut

  • 3 zucchini zoodled

  • 1/3 cup fresh basil leaves

Method:

  1. In a heated frypan add 1 tbsp olive oil, garlic, ginger and spring onion and saute for 3 minutes.

  2. Add in the broccoli and a pinch of salt and pepper and cook for a further 4 minutes.

  3. Now add in the kale and the juice of 1/2 lemon stiring to coat everything in that beautiful mixture.

  4. Add in the cherry tomatoes and cook for a couple more minutes before removing, covering and setting aside.

  5. Now add the salmon fillets to the pan along with the coconut aminos and a sprinkle of sale and pepper. Cook each side for around 5-7 minutes.

  6. Meanwhile add your zoodles to your bowls.

  7. Once salmon is cooked, flake a part using two forks and add the broccoli mixture back in to heat up.

  8. Add the mixture on top of your zoodles, squeeze some extra lemon and spread over basil leaves.
