Chicken Salad with Seed Crackers

GF, DF, V and RSF - serves 4

Ingredients:

  • 2 large chicken breasts

  • 3 tomatoes diced

  • 1 lebanese cucumber diced

  • 1/4 red onion diced

  • 1 big bunch of greens (cos lettuce/spinach)

  • 1 lemon

  • Salt and pepper

  • 1/4 cup chopped fresh herbs (coriander,basil)

  • Sprouts (optional)

  • Homemade hummus to serve (under condiments)

Crackers:

  • 1/4 cup flaxseeds

  • 1/4 cup sunflower seeds

  • 1/4 cup pumpkin seeds

  • 1/8 cup chia seeds

  • 1/4 tsp onion powder

  • 1 tbsp rosemary

  • Pinch of pink salt

  • 3/4 cup water

Method:

  1. Pre heat oven to 180 degrees C and line a baking tray with paper.

  2. In a bowl, add all the cracker ingredients together and mix well. Set aside for 5 minutes.

  3. Dice the chicken and place into a bowl, add the zest of 1 lemon, the fresh herbs, a drizzle of olive oil and season with salt and pepper. Mix well and set aside.

  4. Now, pour the cracker mixture onto prepared tray spreading out until around 0.5cm thick. Place into the oven and bake for 15-20 minutes.

  5. Meanwhile add the chicken to a heated pan and fry off until cooked through.

  6. While this cooks assemble all of the salad ingredients into a large bowl and squeeze over the juice of the lemon and a sprinkle of salt and pepper.

  7. Once crackers are done, remove and let cool slightly before breaking into crackers.

  8. Add the cooked chicken to the salad and mix.

  9. Add the chicken salad to your bowls and top with hummus and crackers.
