Satay Chicken Skewers

GF, DF and RSF - serves 4

Ingredients:

  • 2 large chicken breasts diced around and inch thick

  • 1/2 cup of coconut milk (canned)

  • 2 tbsp of tamari

  • 1 lime

  • 1 tbsp of raw honey/maple syrup

  • 1/4 cup of natural peanut butter

  • 1 small garlic clove grated

  • 150g spinach

  • 3 radishes sliced

  • 1 lebanese cucumber

  • Peanut pieced

  • 1 cup of brown rice

  • Skewers

Method:

  1. Cook your rice to packet instructions.

  2. Meanwhile, in a medium bowl add the coconut milk, tamari, juice of half of the lime, honey, peanut butter and garlic and whisk to combine.

  3. In a seperate bowl add 3/4 of the sauce mixture along with the chicken. Toss to coat.

  4. Place the chicken on the skewers about 4-5 pieced each one.

  5. Place chicken skewers on a hot griddle cooking for 5 minutes each side until chicken is cooked through.

  6. While this cooks assemble your salad , squeeze over the rest of the lime, add the rice and top with chicken skewers.

  7. Sprinkle over the peanut pieces and enjoy.
