Mexi Stuffed Mushrooms

Ingredients:

  • 8 large flat mushrooms or 8 portobello mushrooms (stems removed)

  • 85g tomato paste

  • 1/2 cup quinoa rinsed

  • 1/2 red onoin diced

  • 1 large garlic clove finely diced

  • 1/2 tbsp smoked paprika

  • 1/2 tbsp ground cumin

  • Salt and pepper

  • 1/2 cup blackbeans rinsed

  • 1/2 cup corn rinsed

  • 1/2 cup diced red capsicum

  • 1 avocado

  • 1 tomato

  • 1/3 cup diced cucmber

  • 1/2 tbsp lime juice

  • Mixed greens
