Breakfast Cookies
DF, V and RSF - Makes 10
Ingredients:
1 1/2 cups rolled oats
1/4 cup coconut flour
1/2 tsp cinnamon powder
1/2 tsp baking powder
1 tbsp linseeds
2 tbsp pumpkin seeds
1 tbsp sunflower seeds
1 tbsp hemp seeds
1 tbsp cacao nibs (optional)
2 tbsp sultanas
1/4 tsp pink salt
1/4 cup coconut oil
1/2 tsp vanilla extract
2 tbsp maple syrup
1 egg whisked
2 tbsp almond milk (if needed)
Method:
Pre heat oven to 180 degrees C and line a baking tray.
In a bowl mix all your dry ingredients together.
In a seperate bowl, mix all your wet ingredients together.
Now combine your wet and dry ingredients mixing well. If mixture is a little dry, add in the 2 tbsp of almond milk.
Using wet hands, scoop out and roll your biscuits, pressing down slightly to create a disc.
Place in the oven and bake for 15 minutes or until they are golden on top.
Remove and let cool.
