Breakfast Cookies

DF, V and RSF - Makes 10

Ingredients:

  • 1 1/2 cups rolled oats

  • 1/4 cup coconut flour

  • 1/2 tsp cinnamon powder

  • 1/2 tsp baking powder

  • 1 tbsp linseeds

  • 2 tbsp pumpkin seeds

  • 1 tbsp sunflower seeds

  • 1 tbsp hemp seeds

  • 1 tbsp cacao nibs (optional)

  • 2 tbsp sultanas

  • 1/4 tsp pink salt

  • 1/4 cup coconut oil

  • 1/2 tsp vanilla extract

  • 2 tbsp maple syrup

  • 1 egg whisked

  • 2 tbsp almond milk (if needed)

Method:

  1. Pre heat oven to 180 degrees C and line a baking tray.

  2. In a bowl mix all your dry ingredients together.

  3. In a seperate bowl, mix all your wet ingredients together.

  4. Now combine your wet and dry ingredients mixing well. If mixture is a little dry, add in the 2 tbsp of almond milk.

  5. Using wet hands, scoop out and roll your biscuits, pressing down slightly to create a disc.

  6. Place in the oven and bake for 15 minutes or until they are golden on top.

  7. Remove and let cool.
