Blueberry Pancakes

Ingredients:

  • 1 cup oats

  • 1 banana

  • 1 tsp baking powder

  • 1 /2 tsp vanilla extract

  • ½ cup blueberries

  • 1 egg

  • ½ tsp cinnamon

  • 1 tbsp vanilla protein (optional)

  • Coconut/greek yoghurt and fresh blueberries to top

Method:

1.      Add all dry ingredients into a blender (except blueberries) and blitz to form the batter.

2. Stir through the blueberries.

3.      In a heated pan, pour the mixture to form pancakes.

4. Cook for a few minutes each side until golden.

5. Top with yoghurt and fresh blueberries.
