Carrot Cake Blissballs

GF, DF and RSF

Ingredients:

  • 1 cup of pitted dates

  • 1 cup of shredded coconut

  • ¼ cup water

  • 1 carrot grated

  • ¾ cup of cashews

  • ¼ tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ vanilla extract

  • Pinch of sea salt

  • Extra shredded coconut to roll in

    Method:

    1. In a blender add dates, water and vanilla. Let it soak for 5 minutes .

    2. Add all other ingredients and blitz to form a paste (Leave a little chunky) .

    3. Roll into balls then roll them in extra coconut .

    4. Keep in fridge in an airtight container.
