Eggcellent Nourish Bowl
GF, DF and RSF - serves 2
Ingredients:
2 boiled eggs
1 bunch of mixed greens
1 cup cherry tomatoes
1 cup shredded red cabbage
1/2 cucumber diced
1/2 cup radish sliced
1 avocado halved
1 medium sweet potato cubed
1/2 tsp cinnamon
1 tbsp coconut oil
Salt and pepper
Cashew mayo to serve
Method:
Rub the sweet potato with the coconut oil and sprinkle with cinnamon and add to a heated pan. Fry off until softened.
Add in red cabbage to soften .
While this cooks, assemble the rest of your salad.
Add the sweet potato and red cabbage on top.
