Eggcellent Nourish Bowl

GF, DF and RSF - serves 2

Ingredients:

  • 2 boiled eggs

  • 1 bunch of mixed greens

  • 1 cup cherry tomatoes

  • 1 cup shredded red cabbage

  • 1/2 cucumber diced

  • 1/2 cup radish sliced

  • 1 avocado halved

  • 1 medium sweet potato cubed

  • 1/2 tsp cinnamon

  • 1 tbsp coconut oil

  • Salt and pepper

  • Cashew mayo to serve

Method:

  1. Rub the sweet potato with the coconut oil and sprinkle with cinnamon and add to a heated pan. Fry off until softened.

  2. Add in red cabbage to soften .

  3. While this cooks, assemble the rest of your salad.

  4. Add the sweet potato and red cabbage on top.
