Thai Beef Lettuce cups
GF, DF and RSF
Ingredients:
500g beef mince
1 bunch of cos lettuce
2 carrots grated
2 cups red cabbage shredded
1 tbsp of grated ginger
1 large garlic clove grated
1 red chilli diced (optional)
3 tbsp tamari
1/4 tsp sesame oil
Vermacilli Noodles
1 spring onion chopped
1 cup diced cucumber
1/2 cup diced tomato
Sesame seeds to top
Method:
In a heated frypan, add garlic, ginger, sesame oil, tamari and 1 tbsp of olive oil and satue for for 1 minute.
Add in the beef mince, breaking it up as it cooks
Now add in the carrot and cabbage and cook for 2 minutes.
Add your noodles to a bowl and cover with boiling water, letting it soften for 5-8 minutes.
Once the beef mince has cooked, season with salt and pepper.
Now drain the noodles .
Grab one of your lettuce leaves, place some noodles on and top with the beef mixture, cucumber, tomato and sesame seeds.
Repeat and enjoy!
