Savoury Pancake

GF, DF and RSF - makes 4

Ingredients:

Pancake:

  • 1 cup of buckwheat flour

  • 1/2 cup arrowroot flour

  • 1 cup warm water

  • 1 tsp curry powder

  • Pinch of salt

Filling:

  • 1 carrot cut into matchsticks

  • 2 cups red cabbage shredded

  • 1 bunch broccolini

  • 1/2 red capsicum sliced

  • 250g firm tofu

  • 2 tbsp coconut aminos

  • 1/2 avocado diced

  • Fresh coriander to serve

Method:

  1. To make your pancakes, add all ingredients except the water .

  2. Slowly add in the water whisking well until it slightly thickens.

  3. In a heated frypan, add a scoop of the pancake mixture creating a nice thin and even pancake.

  4. Once it starts to bubble slightly, flip and cook the other side for another minute or two.

  5. Remove and set aside repeating with the rest of the mixture.

  6. Once your pancakes are done you can move onto the filling.

  7. Add in the tofu, cabbage, carrot, capsicum and broccolini along with the coconut aminos cooking for 5 minutes.

  8. Once done, scoop some of the mixture into the middle of a pancake and top with fresh avocado and coriander.
