Jackfruit Burrito Bowl

GF, DF, V and RSF - serves 4

Ingredients:

  • 2 cans of organic jackfruit (you can find this in the health food isle)

  • 1 can blackbeans rinsed

  • 1 tbsp smoked paprika

  • 1/2 tsp cumin

  • 1/4 cup tomato paste

  • Salt and pepper

  • 1/2 lemon

  • 1.5 cups brown rice

Salad:

  • 1 bunch of cos lettuce

  • 2 tomatoes diced

  • 1/2 lebanese cucumber diced

  • 2 radish sliced

  • 1 avocado diced

  • 1/2 lemon

  • Fresh coriander to serve

    *Serve as is or with my sriracha mayo

Method:

  1. In a medium saucepan , cook rice to packet instructions.

  2. While this cooks, fry off the jackfruit, blackbeans, tomato paste, paprika, cumin and a pinch of salt and pepper for around 5 minutes.

  3. While this is cooking, prep your salad ingredients and squeeze over the juice of 1/2 of a lemon.

  4. Once your jackfruit is cooked, turn off the heat and cover to keep warm.

  5. Once your rice is cooked, divide between bowls, add your jackfruit and top with the salad and fresh coriander. Add a drizzle of my sriracha mayo if you are feeling fancy.
